The last time we had a Guatemala Xinabajul at the shop, it got absolutely cleaned out (probably because I also roasted myself some — sorry about that). This micro lot comes to the roastery from a small scale producer in the Paraiso village of La Libertad, Huehuetenango. The farm sits at elevations up to 1950 meters and was founded nearly 100 years ago.

I really believe you’ll love this in a milk based espresso drink as it is full bodied with layers of chocolate and caramel tones that espresso lovers lust over. Yes, the chocolate torte and cocoa nibs are prominent, but as the coffee cools, you may find some sweeter caramels like dulce de leche. I’ll leave the discovery to you. After all, this is your coffee journey.
