The return of a Certified Organic Mexican lot from the Chiapas region brings with it a well-rounded and people pleasing flavor profile. This coffee has an approachable sweetness and a mellow acidity. I’ve roasted this coffee a little past medium to the Full City level to highlight what I want to express in this special coffee. Balance with enough substance to carry us through the day. I’ve had it both as a hot and iced drink. Exceptional.

This coffee will perform across a wide range of prep methods. I think the body holds up to milk rather nicely, but I’d keep the drink size to 8 oz or less. It also has enough complexity to be enjoyable with various drip and filter methods. The espresso pull will be a beautiful caramel color and I trust you will be happy.
